Bacon Patty Melts are the perfect way to have the diner experience at home.
My parents had different ideas of what good food was. That made meal time growing up rather interesting at times. I take after my mom on most foods with a few exceptions.
That being said coming up with something to share for Dad’s Favorite Recipes was difficult. Most of the foods he liked that I actually enjoy, Pineapple Upside Down Cake and Coconut Cream Pie for example, are already on the blog.
After brainstorming with Mama I came up with either Patty Melts or ground beef enchiladas. It’s June in Alabama which means HOT so I decided to go with something that doesn’t require the oven.
Dad had a couple of dishes he made and patty melts were one of them. On the occasional weekend night he would man the stove for dinner and give Mama the night off from cooking.
Dad kept the melts a little more traditional but I think he would have liked these bacon patty melts. Crispy bacon, tender onions, two kinds of cheese, and tasty beef is sandwiched between two slices of grilled Texas toast.
If you are looking for a low calorie or quick dinner this isn’t one of them. Bacon patty melts are a fantastic indulgence and a fun way to remember my dad.
Bacon Patty Melts #SundaySupper
Prep Time 10 minutes Cook Time 35 minutes Total Time 45 minutes Servings 2 Author Micha @ Cookin’ Mimi
- 4 slices crispy bacon crumbled
- 4 slices Texas toast
- 2 slices American cheese
- 2 slices deli cheddar
- 1/2 pound ground chuck
- Pinch of Salt
- Pinch of Pepper
- Pinch of Garlic powder
- 1 medium onion sliced into half moon rings
- 3 Tablespoons softened butter
- Place the ground chuck in a bowl and season with salt, pepper, and garlic powder
- Form into patties roughly the same size and shape as the Texas toast
- Cook over moderate heat for 5 minutes per side or until the internal temperature is 165 degrees Fahrenheit
- Remove from skillet and keep warm
- Drain off most of the fat from the skillet and add onions
- Cook on low for 10 to 15 minutes or until softened and browned
- Heat a clean skillet over medium heat
- Spread one side of two of the pieces of bread with the butter
- Place buttered side down in the skillet
- Top with the American cheese
- Place the bacon on top of the cheese
- Add the patties
- Top with onion
- Place the Cheddar cheese
- Finish off with the other slice of bread that has been buttered with the buttered side up
- Cook for 4 minutes per side or until golden and the cheese has melted.
